The method which has been used in this case for the sparkling effect is the Charmat method, with a secondary fermentation in bulk tanks, using yeast from the same grape variety.
Golden yellow and brilliant for the eye. The effervescence is quit good, the size of the bubbles are fine, quite numerous and persistent.
In the nose it's a fine fragrant presence of the second fermentation, forecomed with the fresh acidity from white fruits like apples as Granny Smith. Over all goes fine impressions of countryside flowers.
On the palette it's a dry wine, fresh acidity with impressions of flowers, very present, but not invasive.
A classic good proposal for an aperitivo! Should be served young and cold.
Don't be afraid of trying this Spumante to fried vegetables, cheese of low to medium age, or a fish which isn't so lean. The sparkling dryness will take care of that.
