It has a wonderful golden yellow colour, combined with a very limpid density and a medium thick body.
In the nose it's quite intense, crisp and fresh.
Take a sip and you will feel the sapid mineral flavours, combined with yellow fruit like apple and green fruit like pear and goosberries. For those of you who knows what the beverage "Pommac" is, you will come quite close this flavour. It's a relative complex wine.
The intensity and persistence is quite good, but feels a little bit "waterish" at the end. It is very drinkable in a mostly positive way, and it gives overall a very balanced impression.
Without knowing it I think the winemakers at Binè have had this wine in oak barrels for some ageing, not to long though.
This Gavi is quite mature, and you could with advantage have it now.
I would recommend this Gavi for dishes with fish, like trout for example.
Serving temperature 10-12 degrees Celsius.
