The ageing of theirs Chianti Classico is made in chestnut barrels, for about 30 months, before putting them on bottles minimum 6 months, before start selling.
It's a quite limpid wine, more than quite consistent I would say (the Chiantis normally doesn't have this consistency). It's a ruby red color with beginning orange shades cutting through the wine.
In the nose it's quite intense impact of flowers (red flowers like poppies), fruits (red fruits like strawberry and red currant, black fruits like blueberry and black currant), minerals (graphite), franc (raw ham). The chestnut from the barrels are present in the shape of hazelnut impressions.
Migliorinis Chianti Classico is dry, quite warm, quite soft, quite fresh, tannic, quite tasty, good structure/strong body, balanced, quite intense, and persistent in it's flavours. Stirring it around gives me red flowers, fruit like raspberry, strawberry, blueberry and black currant. After another sip it arrives some black pepper and vanilla at the end.
This Chianti Classico is ready, almost mature. With some more ageing it can be a little bit more soft an relaxed with it's tannins, if that's desirable.
With this Chianti Classico I would recommend red meat in general, white meat from the pan or oven, medium aged cheeses, and medium sweet dark chocolate (perhaps around 60% cacao).
Recommended serving temperature 18-20 degrees.
