They let the grapes dry for three months after harvest, then the grapes get crushed and the must is left in chestnut casks for at least three years of ageeing. Then it's time for bottling.
This "holy-sacred" wine has a quite intense flavor of peaches and tropical fruits, quite complex and quite persistent.
I would of course recommend this to Cantuccini, the traditional Tuscan almond cookies, but also to most other dry cakes and cookies.
Recommended serving temperature 17-19 degrees.
Some historians says the Vinsanto was created for serving during the mass in the church, so I guess we have to thanks the priests for this wonderful beverage.
