Already when you start pour up the wine in the glass you see it's colour is excellent, a deep brilliant ruby red colour.
The nose is really complex, and medium-intensive (as with many Chianti Classicos). I found a lot of mature red fruit, young balsamic vinegar, mint, caramel and discrete fumes of tobacco. The wine has spent two years in oak barrels for giving the right matureness. On the palette it's intensive, persistent, dry, warm, fresh, has a good portion of salt and minerals, a fine roundness and elegant tannins. It's body is well-developed and structured.
A rare done beef from the pan is the perfect choice for this wine, aged cheese like pecorino and Parmesan as well. I tried it even with different dishes of pasta, and my favourite became the one with broccoli topped with Parmesan!
My taste buds often takes me down into Chianti-land, and it's very seldom I get disappointed.
