At the very southern end of Tuscany you find this big wine cooperative Cantina di Pitigliano, that has been doing wine for the last 50 years. Pitigliano is a town I have returned to many times, both in my job as a tour guide, but also for the sheer pleasure to see the charismatic town, with all the small winding streets in the old part of town, and the mighty views from the walls. First time I saw it was coming from Manciano on SS74 Maremmana, which probably is the most beautiful way to arrive at Pitigliano.

With a blend of Trebbiano toscano, Chardonnay, Sauvignon and Malvasia this white wine from Pitigliano has a quite complex flavor. If you then add to the picture the local soil which is mix of limestone and clay, it becomes a quite interesting wine. It has a lot of beautiful salt and minerals, a nice acidity that makes it really fresh, a structured relative full-bodied wine. Mostly dry, with an initial fruity discrete sweetness.

A classic recommendation would to combine this Bianco di Pitigliano with fish, or seafood appetizers. If you have some chicken or turkey meat at home, fry it in the pan or cook it in the oven, don't make it to spicy though. Enjoy it also with some pasta, green vegetables like broccoli or zucchini, or just have it well chilled on top of a hill at sunset, with a good friend.
